Winterhalter’s extra energy lesson

Energy isn't just on the curriculum in physics classes. It's a hot topic in educational management too, as lower energy costs and better working conditions grow in importance.

Never more so than for the warewash area, where many dishwashers generate steam and heat every time they are operated. School managers are watching huge amounts of money disappear in energy costs, while they worry about what's left to spend on food ingredients.

Now warewash specialist Winterhalter has launched Energy, a new option that will recycle heat during the wash cycle, and eliminate the steam and hot air released by warewashers. It reduces energy costs while making dishwashing a more pleasant activity. It also enhances hygiene within the dishwasher.

Designed specifically for the GS 502 and GS 515 pass-through warewashers, the Energy system uses the heat from the washwater steam to heat the incoming cold washwater, releasing cool dry air into the school kitchen. The total energy loading can be decreased by up to 3kW, resulting in savings of up to £450 a year.

Winterhalter says that the Energy option could pay for itself after little more than two years, and over a typical lifetime of around eight years could save each installation more than 40,000 kWh. At current prices that represents over £3,600 and this figure can only grow.

Many school kitchens tend to be older and less well ventilated than modern restaurant kitchens, and the reduction in heat and steam not only makes a bigger difference in comfort, but makes the kitchen ventilation systems work less hard as well - delivering further savings.

In the case of a new kitchen, factoring a Winterhalter dishwasher equipped with Energy into the layout could mean a considerably easier design and lower construction costs for the ventilation.

Winterhalter says that Energy optimizes hygiene control in the dishwasher. If steam is trapped in the hood it can encourage bacteria to grow. By extracting all the steam, the Energy ensures this can’t happen and, in conjunction with the GS500’s continuous hood cleaning system, delivers the best possible hygiene.
